Salmon with Easy Dill Sauce


My extended family is visiting from France at the moment. That combined with the moving and our house renovations has contributed to my sparse postings recently.

But I wanted to share this one because it is quick, easy and delicious.

First of all, what could be a better marriage than salmon and dill? Especially to showcase the beautiful wild sockeye salmon available in beautiful British Columbia.

Secondly, what could possibly be easier that this recipe? The ingredients are straight forward and the salmon is baked in the oven. You need a baking dish or sheet for the salmon and a bowl to mix the sauce. The result? Easy clean up and a fantastic meal!


Salmon with Easy Dill Sauce
Serves 4-6 people

750 grams Fillet of Salmon
Salt and Pepper
1/2 cup Mayonnaise
Juice and Zest of 1 Whole Lemon
1/4 cup Fresh Dill, chopped

Preheat the oven to 350 degrees Fahrenheit.

Place the whole salmon fillet (or the pieces of salmon if using individual fillets) on to a baking sheet lined with foil or into a baking dish. Season with salt and pepper.

Bake the salmon in the preheated oven for about 20 minutes, or until salmon is firm to the touch. If you look into the centre of the fillet, it should be still be slightly pink/orange in the centre. Do not overcook as the salmon with cook up a little once it is out of the oven.

While the salmon is baking, mix the mayonnaise, lemon juice and zest and fresh dill in a bowl. Serve with the salmon.
