Breakfast Quesadillas



After about a month of hard work on our new house, we finally had a chance to sit and enjoy a moment on our deck.

The sun was shining and we wanted to take a break and grab a bite, and breakfast quesadillas came immediately to mind.

I am not sure what it is about breakfast, but it's a comforting, relaxing sort of meal. The exact first meal that I would want to enjoy at our new house.

The quesadilla contained all the things I love... eggs, bacon and cheese and was served with guacamole and salsa. Fantastic!

Breakfast Quesadillas
Make as many as you want!

Flour Tortillas
Eggs
Bacon, cut into chunks
Grated Cheese
Olive Oil
Salt and Pepper

Condiments (optional)
Guacamole
Salsa
Sour Cream

In a large pan over medium high heat, cook the bacon until the fat is rendered (5 minutes). Remove the bacon from the pan and place on a paper towel.

Remove most of the bacon fat from the pan, reserving about 1 tsp in the pan.

In a bowl, beat the eggs. Add the cooked bacon and about 1/2 the grated cheese. Season with salt and pepper. In the pan with the bacon fat over medium heat, add the eggs and cook, stirring, until just done (1-2 minutes). Do not overcook.

Remove the eggs from the pan and set aside. Quickly clean the pan with a paper towel and set aside.
Take one tortilla and sprinkle grated cheese on half of it. Top that half with scrambled eggs. Sprinkle the eggs with grated cheese. Fold the plain half of the tortilla over the half with the eggs and press down lightly. Repeat with the remaining tortillas.

Add enough olive oil to the pan to just coat. Heat over medium heat.
Place 2 of the folded tortillas into the pan and press down lightly. Cook until the tortilla is browned and the cheese is melted. Turn over and cook the other side. Cut into triangles and serve with preferred condiments.
