Triple Chocolate Cookies


So, my computer just died. About 2 months ago in fact. Which would explain why I haven't been around for a while. Not that I haven't been cooking or eating... just that I haven't been able to tell you about it.

It is extremely frustrating. One day its working, and one day its not. No warning. No remorse. It just happened.

And sometimes, life delivers us other unexpected surprises. Like visitors at our doorstep. Unannounced, unexpected, but of course welcome. So, what to do? Offer them a taste of these delicious Triple Chocolate cookies with a cup of tea, and they will wish they came over more.

Triple Chocolate Cookies
Makes about 60 cookies

1 1/2 cup unsalted butter, softened
1 1/2 cup brown sugar
1/2 cup granulated sugar
2 egg
1 tbsp vanilla extract
3 1/2 cups all purpose flour
1/2 cup Cocoa Powder
4 tsp cornstarch
2 tsp baking soda
1 tsp salt
3/4 cup semi sweet chocolate chunks
1/2 cup milk chocolate chunks
1/2 cup white chocolate chunks

Preheat oven to 350 F.

Cream together butter and sugars until smooth. Add egg and vanilla and blend in.

Stir in flour, cornstarch, baking soda and salt. Stir in chocolate chips or chunks.

Drop by tablespoons onto a silpat lined baking sheet (or greased baking sheet) and bake for 8-10 minutes, until golden brown around the edges.

Transfer to wire racks and let cool slightly. Enjoy!

  1. YUM! Plus it makes a lot of cookies. Those are the types of recipes I like and can use. These 12 cookie recipes, who needs only 12 cookies?

  2. Love these cookies. It's good that the recipe yields more than the typical 24 as in most recipes.

    Thanks for sharing and jogging my memory. I can get these ready for my grandson's school bake sale.
