Simple Tomato-Rosemary Tart


It's the simple things that get me excited. Like this tart. Easy to make using fresh tomatoes and rosemary from the garden... it's an unbeatable snack, lunch, or light dinner.

Try it. You'll see...

Simple Tomato-Rosemary Tart
Makes 1 Tart

1 sheet Puff Pastry OR make a fabulous Whole Wheat Pastry Crust
3 Tomatoes, thinly sliced
1 White Onion, diced
2 cloves Garlic, minced
1 tbsp Fresh Rosemary, chopped
2 tbsp Dijon Mustard
1 tbsp Olive Oil
Salt and Pepper



On a sheet of paper towel, lay out the tomato slices, sprinkle with salt, and leave to sit for about 30 minutes to remove excess liquid.

Meanwhile, heat the olive oil in a pan over medium heat. Add the onions, garlic, and rosemary and sauté for about 5-8 minutes until the onions are soft. Season with salt and pepper. Remove from heat.

Preheat the oven to 180 degrees Celsius (350 degrees Farenheit)..

Place the puff pastry or tart shell in a tart pan. Spread with the Dijon mustard. Lay the tomato slices onto the tart shell. Top with the sautéed onions. Bake in the preheated oven for 25-30 minutes until the pastry is golden. Remove from oven and let cool slightly before serving.

Triple Chocolate Cookies


So, my computer just died. About 2 months ago in fact. Which would explain why I haven't been around for a while. Not that I haven't been cooking or eating... just that I haven't been able to tell you about it.

It is extremely frustrating. One day its working, and one day its not. No warning. No remorse. It just happened.

And sometimes, life delivers us other unexpected surprises. Like visitors at our doorstep. Unannounced, unexpected, but of course welcome. So, what to do? Offer them a taste of these delicious Triple Chocolate cookies with a cup of tea, and they will wish they came over more.

Triple Chocolate Cookies
Makes about 60 cookies

1 1/2 cup unsalted butter, softened
1 1/2 cup brown sugar
1/2 cup granulated sugar
2 egg
1 tbsp vanilla extract
3 1/2 cups all purpose flour
1/2 cup Cocoa Powder
4 tsp cornstarch
2 tsp baking soda
1 tsp salt
3/4 cup semi sweet chocolate chunks
1/2 cup milk chocolate chunks
1/2 cup white chocolate chunks

Preheat oven to 350 F.

Cream together butter and sugars until smooth. Add egg and vanilla and blend in.

Stir in flour, cornstarch, baking soda and salt. Stir in chocolate chips or chunks.

Drop by tablespoons onto a silpat lined baking sheet (or greased baking sheet) and bake for 8-10 minutes, until golden brown around the edges.

Transfer to wire racks and let cool slightly. Enjoy!
