Light and Crispy Fish & Chips


Frying. It's not something that I do a lot at home. To be honest, because it's messy. And it smells. But it tastes so darn good!

Today I picked up some beautiful fresh fish (snapper) and couldn't resist turning it into fish and chips. And it was amazing! Our daughter of course, who has eaten very little deep fried food, if any, in her lifetime of less than 2 years absolutely adored it, even though fish has been an on and off food for her.

The batter was light and crispy, and the tartar sauce was the perfect tangy accompaniment. Definitely worth the mess and smell in my kitchen!


Light and Crispy Fish & Chips
Serves 3 to 4 people

1 cup Flour
1 tbsp Baking Powder
1 tsp Salt
1 cup Sparkling Water, cold
450 grams Fish (firmer fishes work best like Snapper, Cod, Halibut, Salmon)
Oil for frying (need oil to be at least 6 inches deep in pot for best results)

In a large bowl, mix together flour, baking powder and salt. Stir in the sparkling water to make a batter. The batter doesn't have to be completely smooth.

Heat oil on medium high until hot. You can test if the oil is hot by dropping a tiny bit of batter into the oil. If it immediately bubbles and floats to the top, the oil is ready. 

Holding the battered fish fillet at one end, gently place it in the oil, waving it back and forth across the surface of the oil until it starts to float, at which point, you can release it into the oil. Cook for about 3-4 minutes per side or until golden on both sides.

Remove from the oil onto a paper towel lined plate. Salt lightly while hot if desired.


Tartar Sauce
Makes about 1 cup of sauce

3/4 cup Mayonnaise
2 Pickles, chopped finely
Juice of 1 lime
1 tbsp Dijon Mustard
Salt to taste

Mix all ingredients together in a bowl and serve alongside the fish.

  1. Hi Heather the food looks absolutely fresh and even tasty. I'm a foodie at heart and i usually settle for food which look appealing by the visual. It looks light and fresh and crispy. Simple food is what makes me happy because i also support your opinion that food definitely bring a smile on the face of people. Also, fish needs to be cook to please the people as fish does not please everyone specially kids. only by looking at the fish and chips and salad makes my mouth watery. I always wanted to know how to cook light and crispy fish and finally i found a blog that can make it look appealing and so easy by the ingredients and method you used.
